1-1/4 c orange juice
3/4 c lime juice
1/4 c vinegar
4 pork chops (1" thick)
1 Tbsp black pepper
2 Tbsp Kosher salt
1-1/2 tsp ground cumin
1 Tbsp garlic powder
1 Tbsp onion powder
1 tsp oregano
3 Tbsp canola oil
1/4 c chopped red onion
2 cloves garlic, chopped
1/4 c white wine

Directions:
Directions:
In gallon ziplock bag, combine 1 c orange juice, 1/2 c lime juice, and vinegar. Add pork and marinate for 1 hour.

Mix dry ingredients. Drain and pat dry the chops. Rub with spices. Heat oil in large pan and sear the chops on one side until brown. Flip and turn heat to medium low. Add onion and saute 1 minutes. Add garlic and continue cooking. Add remaining orange and lime juices and wine. Simmer until reduces and begins to thicken.

Put chops on plate; continue reducing sauce by 1/2 and pour over chops. Garnish with sliced avocado, watercress, and Roma tomato slices.

Got this recipe from one of Guy Fieri's shows. He served it with Sofrito Mashed Potatoes (recipe should be in the vegetable section of this book).
