3 whole chicken breasts, boned, skinned, and cut in half
salt
ground pepper
2 sticks butter at room temperature or use Fleishmann’s unsalted margarine (parve)
2 tablespoons finely ground parsley flakes
1 teaspoon ground marjoram
½ teaspoon ground thyme
½ cup mozzarella cheese** (do not use if want non-dairy or don’t like cheese)
½ cup flour
1 cup unseasoned bread crumbs
2 eggs well beaten
½ cup white wine

1. Preheat oven to 350 F
2, Place each chicken half between wax paper and pound to 1/8 inch
3. Remove wax paper top (the side of chicken that is inside, not the smooth side) and sprinkle with salt and pepper.
4. Spread with butter
5. Cut cheese into 6 slices if using; place 1 stick in center of each chicken breast; roll and tuck ends. Use toothpicks if necessary.
6. Roll breast in flour lightly; dip in egg, roll in crumbs.
7. Put in baking dish
8. Put remaining butter in microwave-able bowl (use one large enough so butter does not go everywhere). Microwave to melt CAREFULLY don’t let it burn.
9. Add parsley*, marjoram and thyme to melted butter. Pour over chicken.
10. Bake uncovered 20 minutes
11. Pour wine into baking dish
12. Continue baking for 20 to 25 minutes more.

My friend, Ruth Rogg, shared this recipe with me in 1975 when we lived in Montreal. It has saved me many times when I was unsure what to make for a dinner party. It has become one of the most requested dinners for the family.
