1 tsp. olive oil
8 ounces low fat smoked turkey sausage, sliced
1 medium onion, chopped
2 medium carrots, chopped
1 celery rib, chopped
3 cups low-sodium chicken broth
2 medium sweet potatoes, peeled and diced
3 cups chopped tomatoes
1 can Great Northern beans, rinsed
2 tsp. dried oregano
1/4 tsp. salt
1/2 tsp. ground black pepper
1 6 ounce bag of baby spinach

Directions:
Directions:
Heat the olive oil in a soup pot. Add the sausage slices and cook until lightly browned. Add the onion, carrots and celery. Cook until soft (about 5 minutes). Add broth, sweet potatoes, tomatoes, beans, oregano, salt and pepper. Bring to a boil then reduce heat and simmer, partially covered for 30 minutes.
Stir in spinach and cook until the leaves wilt (about 2 minutes).
