"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 stick butter – use real butter; original recipe called for 2 sticks, but one works great
1-1/4 c sugar
1-1/2 c self-rising flour (or 1-1/2 cups regular flour plus 2 tsp. baking powder & ½ tsp salt)
1 tsp vanilla
3/4 c milk

Chocolate layer:
1 c sugar
6 Tbsp cocoa powder
1 Tbsp cinnamon (optional – I use it)
2 cups boiling water

Directions:
Directions:
Put butter in 9 x 13 pan* and melt in 350º F oven.

Meanwhile, mix sugar, flour, vanilla and milk.. Pour into butter, but do not stir.

Mix sugar and cocoa for the chocolate layer. Sprinkle over the top of the batter, but do not stir. Pour the boiling water over the top. Do not stir. IMPORTANT - make sure you add the water! :)

Bake at 350 for about 35-40 minutes - until the batter is golden. Serve warm.

*Original recipe said to use a glass pan. For this I used a disposable pan so you wouldn’t have to return my glass one! 
