Basic White Sauce
4 tbsp. Butter or Margarine
4 tbsp. Flour, all purpose
2 c. Milk
1 c. Thawed Peas
4 or 5 oz. Canned Salmon
"Chicken of the Sea" recommended
Toast Points, Saltine Crackers or Mashed Potatoes

Directions:
Melt butter or margarine over low temperature, once melted add flour and blend together. Slowly add milk, continuously stirring with a wire whisk. Continue to cook on low heat, stirring until mixture thickens. Add salmon and peas continue cooking until warmed through. Salt & pepper to taste and serve over toast, crackers or mashed potatoes.

1 or 2 sliced hard boiled eggs can also be added to sauce.

Growing up, our generation ate a lot of "creamed" meals. The salmon was replaced with tuna, chipped beef and it has even been replaced with lobster!!
