1 lb. penne (or mini penne) pasta
2 pkgs Italian 5 cheese blend (2 cups each)
Shredded sharp cheddar (about ½ a 8 oz block or more to taste)
½ cup bleu or Gorgonzola cheese
½ to 1 cup of any other cheeses you want (Gouda, Havarti, Goat, pepper jack, etc.)
1 can (15-1/2 oz) petite diced tomatoes
1 lb bacon, diced
½ small onion, diced
1 large pkg. sliced mushrooms
1 cup half & half
Salt & pepper to taste

Cook pasta per pkg directions.

Fry bacon pieces until crisp – drain, but reserve a couple tablespoons of grease to saute onions and mushrooms until onions are wilted.
Mix the shredded cheeses and divide – keeping half to sprinkle on top. Mix other half with the bleu cheese, half & half and tomatoes. Mix in the cooked pasta, mushrooms, and onions. Mix well. Mix in bacon.

Divide mixture between two 9 x 13 pans. Top with remaining shredded cheeses. Bake at 350º F for about 30-40 minutes until mixture is bubbly and cheese on top is melted.
