1/2 cup finely minced shallots or green onions
1/2 cup dry white wine
6 eggs
2 cups heavy cream
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground nutmeg
6 ounces grated Swiss cheese
1 10-inch, deep-dish pie crust

Directions:
Directions:
-Bake pie crust and let cool
-Combine shallots and wine in a small saucepan
-Bring to a boil, turn heat to low and simmer for 2 minutes
-Remove from heat and cool
-Gently beat eggs and cream together
-Stir in wine mixture, salt, pepper and nutmeg
-Sprinkle cheese over crust -- pour egg mixture on top of cheese
-Bake for 35 to 45 minutes at 350º F, until quiche sets (it always takes longer in my oven)
-Let stand 10 minutes before serving
