2 T. butter
2 T. flour
2 cups low fat milk (2% milk is best)
8 oz. sharp cheddar cheese, cut into small cubes
¼ tsp. salt
A few shakes of pepper
8 oz. elbow macaroni or other small pasta

Directions:
Directions:
Cook pasta according to the directions on the package. Drain and set aside.
Preheat the oven to 350 degrees.

In a medium size saucepan, melt the butter over medium heat. Add flour to butter and stir until flour is dissolved. Cook over medium heat for 1- 2 minutes (don’t let it get brown). Slowly add the milk and stir constantly over medium heat until mixture thickens (this takes about 15-20 minutes – keep stirring or it will stick to the bottom). Once the mixture has thickened, remove it from heat, add salt, pepper and cheese cubes and stir until cheese is melted.

Mix the cheese sauce with the pasta and place in a medium baking dish.
Bake at 350 degrees for 30-45 minutes until casserole is bubbly and top is lightly browned.

Let cool about 10 minutes before serving.
