Ingredients: 1lb dates stoned or 1 lb raisins 1/2 lb mixed peel 1/2 lb cherries 1/2 lb almonds 1/4 lb walnuts 2 lb Sultana raisins 1 lb seeded raisins 5 cups flour 1 lb butter 1 1/2 cups brown sugar 1 1/2 cups whte sugar 12 eggs 1 tsp vanilla juice and rind of 1 lemon 4 tsp nutmeg 2 tsp cinnamon 1 tsp mace 1 tsp baking soda 2 tsp cream of tartar

Directions:I have only the list of ingredients. Follow any basic recipe for fruit cake. Bake at a low heat like 300° or maybe 325° It will fill 3 tiered wedding cake pans Allow 1 hour for the smallest one, longer for the middle one and at least 2 hours for the big one. Use a cake tester or a broom straw to check the progress of the baking. I would soak the fruit overnight in fruit juice (I would use rum or sherry but I know Grandma would never have done that.) There are recipes available for the proper icing. We had ours iced by a local baker. Traditionally the bride saves the top layer in a cool dry place for the christening of the first child, or sometimes for the 25th anniversary. |

Notes: It was also customary to cut the cake into small cubes for the guests to take home, and there were special boxes to pack this in. The single women would tuck their piece of cake under their pillows and were supposed to dream of the man they would marry. People who were unable to attend the wedding were mailed a piece of cake in the same little box. I have never made this cake but my Mother-in-Law Agda Schmidt made this recipe for all her children and many of her grandchildren. I want to pass this recipe along before it is completely forgotten.
