8 oz Elbow Macaroni
2 cups shredded Sharp Cheddar Cheese, divided
½ cup grated Parmesan Cheese
3 cups Milk
¼ cup Butter
2 ½ tbsp Flour
½ cup Panko or crushed Ritz Crackers

Directions:
Directions:
Cook macaroni according to the package directions and drain. In a medium sauce pan over medium heat melt the butter. Stir in the flour and cook to make roux. Add the milk to the roux stirring constantly until thickened. Stir in 1 ½ cups cheddar and Parmesan cheese and cook over low heat until melted. Put macaroni in a large casserole dish and pour sauce over the macaroni. Stir well. Sprinkle remaining ½ cup cheddar over mixture. Sprinkle breadcrumbs over macaroni mixture to cover. Sprinkle on a little paprika. Bake in oven at 350°F for 30 minutes.

Mac & cheese was a family favorite. Mom made it from scratch and always baked it; none of that Stovetop stuff for us. I don't have her original recipe, but this one is close. Mom would usually serve this dish with fried ham steak.
