4 medium Potatoes or 1 lb Red Skinned Potatoes (skin on or off)
10 oz package frozen Peas
8 oz package frozen Pearl Onions
3 tbsp Butter
3 tbsp Flour
2 cups Whole Milk
½ tsp Salt
¼ tsp White Pepper

Directions:
Directions:
Cut potatoes into bite sized pieces. In a medium saucepan, cook potatoes in boiling water for 20 minutes or until fork tender (do not over cook). Drain and set aside in bowl. In the same saucepan, melt the butter and stir in the flour. Cook on medium heat and stir mixture constantly until it turns a light brown. Add the milk and bring to a low boil. Continue to cook, stirring constantly until mixture thickens. Stir in the salt and pepper. Add the potatoes, peas and onions. Cook over low heat until vegetables are heated through, about 5 minutes. Serve immediately.

This is my second favorite side dish next to Mac and Cheese. Mom made this often as it goes well with most meat dishes. The pearl onion is my addition. You can leave them out or use a small diced onion sautéed in butter.
