1 cup white sugar
2 unbeaten eggs
1 1/2 cups chopped dates

1 tsp vanilla
1/2 tsp salt
1/2 cup chopped red cherries (or nuts)
2 cups Rice Krispies
coconut
margarine to grease hands

Directions:
Directions:
Into cold frying pan put:
1 cup white sugar
2 unbeaten eggs
1 1/2 cups chopped dates
Turn on heat and begin mixing. Mix for 10 minutes.
Remove pan from heat and add:
1 tsp vanilla
1/2 tsp salt
1/2 cup chopped cherries or nuts
2 cups Rice Krispies

Mix thoroughly. Drop from teaspoon onto coconut and roll into balls. Grease your hands frequently so mixture won't stick to you. A paper plate is useful for the coconut rolling. This should make 60 - 70 cookies.

These are messy to make but very delicious. They keep well, look interesting on a plate of mixed sweets, and are gluten free. If in doubt use gluten free Rice Krispies.
