1/4 c, butter
1/4 c. sugar
1 egg,slightly beaten
1/2 c. flour
1/2 tsp. B.P.
1 Tbsp.grated lemon rind
raspberry jam
Pastry for shells
Buttercream icing

Directions:
Directions:
Cream butter and sugar together.Blend in egg till fluffy.Add flour, B.P. and lemon rind.
Line small tart tins with pastry.Place 1/2 tsp. raspberry jam in the bottom of each.Place 1 tsp. cake mixture on top of jam layer. Bake at 400 Degrees for 5 minutes then reduce to 350 and bake until delicate brown about 10 minutes.Cool and ice with butter cream frosting. Decorate with drage or piece of glace fruit.
