Ingredients: 2 bunches leeks 6 medium potatoes One medium onion Salt pepper veggie broth cream flour grated cheese

Directions: |
Directions:Clean and chop leeks ( only the white and LIGHT green parts) Chop onion into small pieces Peel and cube potatoes into medium sized cubes Saute the potatoes and onion in olive oil and a tbsp of butter until they begin to get a little tender (on fairly low heat) Add white pepper and a fair amount of salt Add leeks and sauté a bit longer sprinkle 2 tbsps of flour over the veggies and stir until absorbed into the juices Add two cups of veggies broth and simmer until veggies are well cooked at end Add 1 1/2 cups cream or a combination of cream and milk. Do not allow to boil after this or the cream will curdle. Sprinkle cheddar cheese (white ) over each bowl at serving time ENJOY |

Notes: this is one of my favorite soups.. Make Bisquick biscuits with it, serve them warm with the hot soup and sprinkle a little white cheddar over top.. YUMMY!
