3 cups brown sugar

Directions:
Mix all together and simmer until well heated through. Put into sterilized quart jars. Add 1 Tbsp rum and 1 Tbsp brandy to each jar. Put on lids. Process 10 minutes or more in boiling canner to seal completely. Makes 5 quarts.

Use as pie filling or in tarts.

Personal Notes:
Personal Notes:
Traditional mincemeat contained meat but this modern version is less rich and cannot spoil as a meat dish might. My Mother made large tarts (or small pies?) with pastry tops and icing sugar sprinkled on them when they came out of the oven. Tiny appie-size tarts are a welcome addition to a dessert plate.
