2 c. ap flour, divided
1 T. baking powder
1/2 tsp. baking soda
1/2 tsp. table salt
1/2 c. butter, frozen and cut into 1/2" pieces
1 tsp. sugar
1 c. whole milk, as needed, COLD

Directions:
Preheat oven to 425º F.
Combine 1-1/4 c. ap flour, baking powder, baking soda, salt, and sugar in bowl of food processor. Pulse to combine (about 2 to 3 quick pulses).
Add butter pieces to bowl and pulse for 10 to 15 seconds until a rough paste forms.
Add remaining 3/4 c. flour into food processor and pulse until mixture resembles cottage cheese (3 to 6 pulses)
Pour flour mixture into bowl. Add 1/2 cup cold milk and mix with spoon. Continue to add milk until sticky dough forms.
Turn dough onto floured surface and knead 5 to 10 times. You may add additional flour until the dough is no longer sticky.
Roll dough into roughly 10" x 10" square. Fold into thirds one direction then fold into thirds the other direction. Roll back into 9" x 9" square.
Cut dough into nine 3" x 3" pieces.
Place biscuits on ungreased baking sheet. Place close together for soft edges or further apart for firm edges.
Optionally brush biscuits with melted butter.
Cook for 8 to 10 minutes until golden brown.
