Ingredients: 1 T. olive oil 1/4 lb. ground pork 1/4 lb. bulk chorizo sausage 1 c. chopped yellow onions 1/2 c. chopped celery 1/4 c. chopped green pepper 1 T. minced garlic salt and pepper to taste paprika to taste poultry seasoning to taste ground thyme to taste ground sage to taste 1/4 c. chopped fresh parsley 12 slices white sandwich bread 2 c. chicken stock (could be more or less) 1 large egg

Directions:Preheat oven to 350 degrees. Heat oil in large sauté pan over medium heat. Add the pork and chorizo and cook until completely browned. Add the onions, celery and bell pepper and cook stirring until vegetables are soft, about 5 minutes. Add garlic and cook for 1 minute. Remove from heat.
Tear bread into pieces and put in large mixing bowl. Add the meat/vegetable mixture and mix well. Add stock (in stages to watch the desired wetness), parsley and seasonings to taste. Once taste and texture is achieved, add egg and mix well.
Pour stuffing into casserole dish and bake until done and nicely browned. |

Notes: It's hard to put exact measurements on this recipe. It's really one that you need to taste as you are mixing all together. This is a very easy recipe to multiply. Helpful tip: I tear the bread the day before and cover the bowl with foil. I saves time on your busy cooking day and it helps that the bread dries out a bit. Enjoy!
