1 medium head romaine
1/4 c. Parmesan cheese
Freshly ground pepper to taste
1 c. onion and garlic croutons

Caesar Dressing
1 clove garlic, crushed
6 anchovy fillets
1/4 tsp. prepared mustard
1/8 tsp. Worcestershire sauce
2 T. lemon juice
1/3 c. olive oil
1 egg, well beaten

Directions:
Directions:
To create the dressing, mash with a fork in a shallow bowl: garlic, anchovy fillets, mustard, and Worcestershire sauce. Stir in the lemon juice and olive oil. Add the beaten egg and mix until combined.

Wash and dry the romaine leaves, and tear into fork-sized pieces. Place the romaine pieces in a salad bowl and toss lightly with dressing just before serving. Add the Parmesan cheese, pepper and croutons. Toss again until well distributed.

If you prefer, you can use a prepared dressing and omit the Parmesan cheese.
