2 c. all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
2/3 c. sugar
1/2 tsp. salt
Grated peel and juice of 1 orange
1 egg, beaten
2 T. Butter
Boiling Water
1 c. blueberries
1 c. chopped walnuts

Preheat oven to 350º. In a mixing bowl, combine 1 3/4 c. of flour, baking powder, baking soda, sugar, and salt. In a measuring c., add butter, orange juice and enough boiling water to measure 3/4 c. liquid. Stir juice mixture into the dry ingredients. Add egg and orange peel. In a separate small bowl, toss together blueberries, walnuts, and remaining flour. Stir into batter and pour into a greased loaf pan. Bake for 55-60 minutes. Cool in pan for 10 minutes, remove from pan and cool on wire rack.
