1 c. flour
3/4 + 1/3 c. sugar
1 1/4 tsp. baking powder
1/4 tsp. salt
1/3 c. milk
1/4 c. shortening
3/4 tsp. vanilla
3 eggs
1 1/2 c. blueberries, washed
1 1/4 c. ricotta cheese
1/4 tsp. vanilla

Directions:
Preheat oven to 350º. In a small mixer bowl, combine flour, the 3/4 c. sugar, baking powder, and salt. Add the milk, shortening, 1 egg, and 1/2 tsp. vanilla. Beat with an electric mixer on low speed until combined, and then beat on medium speed for 1 minute. Pour batter into a greased 9 inch square baking pan, spreading evenly. Sprinkle blueberries over the batter. In a medium mixing bowl, beat the remaining 2 eggs with a fork. Add ricotta cheese, remaining 1/3 c. sugar, and remaining 1/4 tsp. vanilla. Beat until combined and spoon over blueberries, spreading evenly. Bake for 55-60 minutes or until a knife inserted into center comes out clean. Cool, and then cut into 16 squares. Store bars, covered, in refrigerator.
