3 c. sifted cake flour
2 tsp. baking soda
2 tsp. allspice
2 tsp. cinnamon
2 tsp. nutmeg
1 3/4 c. sugar
1 tsp. salt
1 c. homogenized shortening
1/2 c. buttermilk
20 oz. can of blueberries, drained and slightly crushed, reserving 1/2 c. of juice
4 large eggs

Preheat oven to 350º. Grease 2 round 9 inch pans, line with waxed paper, grease again and dust with flour. In a large bowl, sift together the dry ingredients. Add the shortening, buttermilk, blueberries, and juice. Beat mixture on low speed to incorporate. Add the eggs and beat again for 2 minutes on low speed. Pour the batter into the prepared pans and bake for 30 minutes. Cool cakes for 5 minutes and then turn out on wire rack to complete cooling.
