1 3/4 c. sifted all-purpose flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/3 c. shortening
2/3 c. sugar
2 eggs, well beaten
1 c. mashed ripe bananas
1 c. raisins (optional)
1/2 c. nuts (optional)

Directions:
Directions:
Preheat oven to 350º. Mix and sift flour, baking soda, baking powder, and salt (raisins and/or nuts if using). In a separate bowl, cream shortening well. Add sugar gradually and continue beating until light and fluffy. Add eggs, mixing well. Add flour mixture alternately with bananas a little at a time, mixing after each addition until smooth. Pour batter into a well greased pan. Bake 1 hour and cool in pan before removing and cooling completely on a rack.
