1/3 c. shortening
2/3 c. sugar
2 eggs
1 3/4 c. sifted flour
2 1/4 tsp. double action baking powder
1/2 tsp. salt
1 c. mashed ripe banana
1/2 c. chopped nuts
1/2 c. cut up maraschino cherries

Directions:
Directions:
Preheat oven to 350º. Beat shortening until shiny and creamy. Gradual beat in sugar and continue to beat until light. Beat eggs in one at a time, making very light and fluffy. In a separate bowl, re-sift flour with baking powder and salt, and blend into beaten mixture, alternately with mashed bananas. Pour batter in prepared loaf pan. Bake for 60-75 minutes and cool 25 minutes in pan, then turn out on rack to finish cooling.
