2 1/4 c. sifted cake flour
1 1/4 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. shortening
1 1/2 c. mashed ripe banana (4 or 5)
2 eggs
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 375º. Sift together flour, sugar, baking powder, baking soda, and salt. Add shortening, 1/2 c. banana, and eggs. Beat for 2 minutes at slow to medium speed. Add the remaining banana and vanilla. Beat for 1 minute. Pour batter into 2 prepared 8 inch pans. Back about 25-35 minutes. When cool, assemble cake using your favorite frosting.
