1 box prepared phyllo dough (8 sheets)
Butter flavored vegetable cooking spray
2 tsp. sugar
2 tsp. cinnamon


Filling
2 medium Granny Smith apples, peeled, cored, and chopped (~2 1/4 c.)
1 tsp. lemon juice
3 T. granulated sugar
1 T. flour
1/2 tsp. cinnamon
1/4 tsp. nutmeg

Directions:
Preheat oven to 400º. In a medium sized bowl, combine all the filling ingredients and set aside. Place stacked phyllo sheets on a floured surface and cut lengthwise in 3-4 inch wide strips. Cover the phyllo strips with plastic wrap to maintain moisture.

Place 1 strip of phyllo on work surface and lightly coat with vegetable spray. Top with another strip of phyllo and mound 1 heaping T. of filling on one end, about 1 inch from corner. Fold opposite corner of same end over the filling, forming a triangle. Continue folding your way up the strip. Repeat steps with remaining strips of phyllo and filling (~12 turnovers).

To bake, place turnovers seam-side down on lightly greased cookie sheet. Lightly spray tops with cooking spray and sprinkle with cinnamon and sugar. Bake 15-17 minutes or until golden. Remove to wire rack to cool.
