1 cup butter or margarine
1 cup white sugar
3 eggs
3 cups flour
2 tsp Baking Powder
1 tsp salt
1 cup split blanched almonds
1 tsp almond flavouring
1-15oz tin crushed pineapple
1-15 oz pkg light raisins
1 cup glazed cherries
1 cup or more deluxe mixed fruit
1 cup coconut
1/2 cup sherry

Directions:
In the evening: in a microwave-safe bowl combine:
crushed pineapple, raisins, mixed fruit, cherries, coconut and sherry. Mix well.
Microwave high 5 minutes, covered, and let cool overnight.
In the morning: in a large mixing bowl cream butter, white sugar, eggs. Add dry ingredients, then stir in soaked fruit.
Bake 250° - 300°. If using large tube pan, bake 21/2 hours. if using 2 or 3 smaller pans less time is needed.

Store covered until ready to use. Fruit cakes keep very well and need to ripen for full flavour so make them in November for Christmas enjoyment.

Don't be intimidated by fruit cakes. They are easy to make and keep well so you always have something on hand for holiday visitors. Slice them with a very sharp knife or a serrated bread knife.
