3 lbs. sweet potatoes, cubed
1/2 c. granulated sugar
2 eggs, lightly beaten
1/2 tsp. salt
4 T. butter, softened
1/2 c. milk
1/2 tsp. vanilla extract
TOPPING
1/2 c. light brown sugar, packed
1/3 c. ap flour
3 T. butter
1/2 c. chopped pecans

Directions:
Directions:
Preheat oven to 325º F.
Put sweet potatoes in pan and fill with water to 1" over potatoes. Cook over medium heat until tender (20 to 30 minutes). Drain and mash.
While potatoes are boiling make the topping. In a medium mix the flour and brown sugar. Cut in the butter until the mixture is course. Stir in the pecans. Store in refrigerator until ready to use.
Fit stand mixture with paddle attachment. Put potatoes until stand mixer bowl. Add sugar, salt, butter, milk and vanilla extract. Mix until smooth.
Spread the potato mixture into a 9" x 13" or 10" x 13" baking dish.
Spread the topping mixture over the sweet potatoes.
Bake in the preheated oven for 30 minutes, or until the topping is lightly browned.
