2 c. diced apples
3/4 c. sugar
1/3 c. oil
1 egg, beaten
1 1/2 c. flour, un-sifted
1 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 T. orange juice
1/2 tsp. vanilla
1/2 c. raisins

Directions:
Preheat oven to 350º. In a large bowl, combine the diced apples and sugar, then let stand for 10 minutes. Beat the oil, egg, and orange juice in a small bowl and add to the apple mixture. Add the dry ingredients to apple mixture and stir well. Stir in the vanilla and raisins. Pour batter into a greased 8 inch square pan. Bake for 35-40 minutes.
