1 very small white potato ( about the size between a quarter and a half dollar)
1/4 tsp. vanilla
1 box powdered sugar
1/2 cup peanut butter or more

Directions:
Directions:
Cook potato in skin ( if the potato is too big you will never get it stiff enough to roll out) peel and mash potato, add vanilla and mash. Start adding powdered sugar mixing as you add. Use enough powdered sugar to form a stiff dough. Sprinkle a hard surface with powdered sugar and roll out dough. Spread with plenty of peanut butter. Roll up like a jelly roll, wrap in plastic wrap and foil .Refrigerate until firm enough to slice. Slice in 1/4 inch circles.
