3/4 cup unsalted butter or margarine
2 cups brown sugar
6 eggs
4 cups flour
1 tsp Baking Powder
2 tsp cinnamon
1 tsp nutmeg

4 cups raisins
1 lb. deluxe fruit mix
1 cup cut mixed peel
1 lb currants
1 cup glazed cherries

freshly rated orange peel
fresh orange juice

some rum or sherry or orange juice to soak fruit.

Directions:

in the evening: into a large bowl put:
raisins, mixed fruit, peel,currants,cherries. mix, then add rum or sherry. Microwave to scald 5-7 minutes, covered with plastic wrap. Cool overnight.

next morning, into another large bowl put:
butter, sugar and eggs. Cream very well. then add dry ingredients and a little orange juice to moisten the dough. Mix in soaked fruit and orange peel.
bake at 275° for 212-3 hours.
Before baking line the tins with corrugated cardboard topped with parchment paper.

I know fruit cake is no longer popular, but some of us love it, especially Canadians, and it is traditional at Christmas. It is best of all spread with thick almond paste and then white icing.
