Ingredients: 1 head of sour cabbage 1 lb of bacon 1 large onion 4 cups of water 2 cups of rice

Directions:Freeze 1 head of sour cabbage ahead of time. Line a small roaster/casserole dish with foil.
Thaw, core & cut up cabbage leaves to size you want. Chop 1 lb bacon & 1 large onion. Fry together. To cook rice, mix 4 cups water & 2 cups rice ( 2 to 1). Cook uncovered on high heat. Stir occasionally. Reduce to medium heat when mixture starts to boil. Continue to stir and reduce to low heat. Cook until not quite done but sticky. Do not overcook. Add some of bacon/onion mixture to rice and mix. Reserve some of the bacon/onion mixture for layering the cabbage rolls.
Spread a thin layer of grease from bacon and onion mixture on bottom of dish. Place one layer of cabbage leaves on bottom and sides of the dish.
To create rolls, place small amount of rice/bacon/onion mixture in leaf. Tuck in ends and roll. Place one layer of cabbage rolls in dish. Spread thin layer of bacon/onion mixture over placed rolls. Add salt and pepper as desired. Repeat.
To cook, add enough water to cover ½ of cabbage rolls. Cover dish with foil and cook at 400 degrees for about an hour. Reduce to 300 degrees until done. Depending on texture of leaves this could be anywhere from 2 to 3 hours. |
