1 Cup Flour (We use Rice Flour)
1 Cup Vegetable Oil

Directions:

Mix rice flour and oil in cast iron pan. Stir with wooden spoon until ingredients are mixed well. Turn fire to medium high heat and stir the entire time you are mixing as to not burn the roux. If it burns, throw it out and start over. When the roux is yellow it is considered blonde and can be used for other dishes such as etoufee. If you want a light roux then stop it a mocha chocolate color. A Dark Roux is chocolate brown.
