4 slices bacon
1 medium onion, chopped
1 16 ounce can black eyed peas
1 cup minute rice
1 cup hot water
1 teaspoon salt
1/4 teaspoon pepper

Directions:
In 2 quart microwave casserole, place diced bacon. Cover with paper towel microwave on high 2 1/2 or 3 minutes until crisp. Without draining fat, add onion; stir well, microwave uncovered on high 2 to 4 more minutes. Add black eyed peas, rice, water, salt & pepper. Cover casserole lid or vented plastic. Microwave on high 8 to 10 minutes, until rice is tender and ingredients are well blended. Let stand 5 to 10 minutes before serving.
