3 cups cooked pumpkin or 1 large can
3 cups sugar
3/4 cup cooking oil
4 cups flour
3 teaspoon baking soda
3/4 Tablespoons cinnamon
3/4 Tablespoons cloves
3/4 Tablespoons salt
chopped walnuts to taste

Combine pumpkin, sugar and oil. Add sifted dry ingredients. Pour into 2 greased loaf pans. Bake at 350º F for 1 1/2 hours or until done.

Adapted from a Martha Stewart cookbook this recipe was given to me from my friend Kathleen Russell. As I grow butternut squash, I would substitute butternut squash for the pumpkin and try to make many and freeze them. Mostly they were just eaten before I could freeze them.
