1 lb package of spaghetti noodles or noodle of choice
6 pounds of fully ripe tomatoes (softer the better)
6 garlic cloves (we LOVE garlic, so adjust as needed)
2 cups shallots, minced
1/2 bunch fresh basil, finely minced
Full container of oregano .66 oz finely minced
1lb of 90/10 ground beef
1/2lb Italian mild sausage
4 tablespoons Olive oil
Sea salt to taste

Directions:
First, you will need to peel the tomatoes. Heat a large pot of water to boil. Once water is boiling, add a few tomatoes at a time. Once the tomatoes begin to split and curl, pull them out of the water and set them aside to cool. Allow them to cool enough so you can peel the skin away from the tomato. Next you will cut them into very small pieces. (You can make them larger of you want a chunkier sauce) Place cut tomatoes in a large pot on medium heat and stir occasionally. Add basil and oregano.

In a separate pan, heat olive oil over medium/high heat. Add the garlic and onion and roast for 2-3 minutes. Remove from pan and add to the tomato sauce.

In a separate pan, cook the sausage and ground beef until fully cooked. Drain and add to the tomato sauce. Salt to taste.

NOTE: You can also add additional veggies, keeping in mind you may need to add some water to help compensate for the added ingredients.

Turn heat to a simmer, and cover. Remember to stir occasionally. Simmer for about 2-3 hours before serving.

When you are about ready to eat, cook the noodles according to the directions on the package, drain, and add to sauce. Stir noodles into the pot, then serve with garlic bread.
