3 Quarts of strong beef or veal stock

1 onion peeled and cut in half

1 carrot, peeled and chopped

3 stalks of celery, rough chopped

6 oz. tomato paste

Directions:
Directions:
Bring the stock, vegetables and tomato to a boil. Lower sauce to a heavy simmer and reduce by 2/3.

I freeze mine in plastic baby food containers but an old ice cube tray would work just as well if you don't have a baby in the family!
