4 Chicken Breasts, boneless and skinless

1/2 cup flour

salt and pepper to taste

Dried oregano and thyme to taste

4 Tbsp. oil

4 Tbsp. Butter

2 cups fresh mushrooms, sliced

1 cup Marsala Wine

4 oz. "Quick Demi Glaze" ( see recipe in Misc.)

Directions:
Slice the chicken breasts into thin cutlets and placing them between two sheets of plastic wrap and pound the cutlets into 1/4 inch thickness.

Combine the flour, salt, pepper, oregano and thyme in a bowl and dredge the chicken, shaking off any excess.

Heat the oil and butter in a skillet over medium heat. Cook chicken breasts on medium heat for about 2 -3 minutes on the first side, until lightly browned. Turn breasts over and cook opposite sides for an additional 2 minutes.

Remove chicken and place on a paper towel covered plate. Add the mushrooms to to skillet. Saute the mushrooms for 2 minutes until lightly browned. Stir the mushrooms and add the Marsala wine. Deglaze the pan with the wine and reduce the wine slightly.

Add the Demi glaze and place the chicken back in the pan and simmer for an additional 10 -15 minutes until the chicken is cooked through.

Nancy gave me a Sauce making class for Mothers Day one year. It was a fun night! We made this recipe and the Demi Glaze.Then we got to eat it! The Demi Glaze is nice to have to throw into any soup or stew or sauce that needs a little kick!
