1lb large shrimp, peeled and deveined (good choice: 16-20s)
1/4 teaspoon kosher salt
1 teaspoon crushed red pepper, divided
1½ tablespoons extra virgin olive oil
1 medium onion, sliced
1 (14.5 ounce) can diced tomatoes (I always use no salt added)
1 cup dry white wine or broth (sauvignon blanc is delicious!)
3-4 cloves of garlic, chopped
1 teaspoon dried oregano
2-3 tablespoons chopped fresh basil
Parmesan cheese for topping (optional)

In a large skillet, heat the oil over medium-high heat.

In a small bowl, toss the shrimp with the salt and 1/2 teaspoon of crushed red pepper. Add shrimp to skillet and cook until almost completely done. About 3-5 minutes depending on shrimp size.

Transfer the almost cooked shrimp to a plate.

In the skillet add the onion. Saute about 5 minutes.

Add the tomatoes and their juices, wine, garlic, oregano and the 1/2 teaspoon of crushed pepper. Simmer for 7-10 minutes to let the sauce thicken.

Return the shrimp to the pan and let cook for another 5 minutes.

Stir in the chopped basil.
Serve warm over pasta or with a baguette and top with Parmesan cheese.
