2˝ cups All-Purpose Flour
˝ cup Quick Oats
1 tsp. Baking Powder
˝ tsp. Baking Soda
1⅓ cup Dark Brown Sugar
⅓ cup Sugar
˝ cup Crisco (do NOT substitute this with store brand)
8 Tbs. Butter (at room temperature, NOT margarine)
3 Tbs. Honey
2 tsp. Vanilla Extract
2 large eggs (at room temperature)
1˝ cups Semi-Sweet Chocolate Chunks
˝ cup Milk Chocolate Chips

1.Preheat oven to 350 degrees.
2.In a large bowl, mix the flour, oats, baking powder, and baking soda.
3.In another bowl (I used a Kitchen-Aid Stand Mixer), combine the dark brown sugar, sugar, Crisco, butter, honey, and vanilla extract.
4.Add eggs (be sure they’re room temperature – it helps the cookies rise) to wet ingredients bowl, and continue to mix. Do NOT over mix once eggs are added.
5.Slowly add dry ingredients to wet ingredients bowl and combine until all of the dry ingredients are incorporated.
6.Add chocolate chunks and chocolate chips. Mix until combined.
7.Using a LARGE scoop (mine was the Medium Scoop by Pampered Chef), scoop 2″ diameter balls of dough on to cookie sheet (I used a Pampered Chef baking stone). Yes these will be big cookies! You will get 9 cookies on to a normal size cookie sheet.
8.Bake at 350 degrees for approx 11-14 minutes. Watch closely after 10 minutes – remove when edges are golden brown and top begins to crack.
9.Let cool completely on cookie sheet or cooling rack.
