5 pounds butt meat or fatback, sliced & washed
5 pounds onions
1 large (28 to 30 oz) can tomato sauce
1½ (64 oz bottles) Heinz ketchup
1½ quarts water
Texas Pete & black pepper to taste

Directions:
Directions:
Fry out butt meat. Saute onions in leftover grease. Place in a large pot and add remaining sauce ingredients.

Bring to a boil but don't let stick. Simmer 45 minutes or 1 hour before adding the catfish or shrimp.

Enough for about 5 pounds shrimp or catfish.
