2 large eggplants
3 tomatoes
1 small onion, grated
2 tbsp. chopped parsley
1 cup oil
3 tbsp. wine vinegar
Salt & pepper to taste

Directions:
Directions:
Bake eggplants in moderate over (350) for 1 hour. Remove, dip in cold water, and peel. Dice & place in salad blow, previously rubbed with garlic. Add quartered tomatoes, onion, parsley, oil, vinegar & seasoning. Allow to marinate 1 hour before serving. Serves 6.
