Yankee Spare Ribs Recipe

1 cup sliced onion
1 cup ketchup
1 cup water
2 teaspoons salt
2 tablespoons Worcestershire sauce
4 tablespoons each of vinegar and brown sugar
2 teaspoons dry mustard
1 teaspoon paprika
2 pounds country style ribs

Cut spare ribs into serving pieces. Brown in skillet over medium heat. Combine all ingredients in a bowl. Drain grease from the skillet and set the ribs aside. Add the sauce mixture to the pan and heat, scraping up any brown pieces from the pan. Put ribs in a baking dish and pour the sauce over it. Cover and bake for 1 ¾ hours at 325º. Periodically spoon sauce over ribs while baking. Turn heat down to 300º if getting too brown.

Our mother grew up in the south, first in Indiana and then in Texas. We would go and visit the cousins and grandparents "down south" many summers, and were always a little surprised when we were referred to as "Yankees" and teased about our accent.
