4 potatoes
Salt and pepper
1 onion, diced
Flour
1 cup diced ham
Shredded cheese
Milk
Butter

Directions:

Grease a square casserole dish. Cut 4 peeled potatoes into ¼ inch slices and set half aside. Place half of the potatoes in one layer in the casserole dish. Salt and pepper the potatoes. Sprinkle a small amount of diced onion and a bit of flour over the top of the potatoes. Add 1 cup of diced, cooked ham. Add another layer of the remaining potatoes and some shredded cheese. Salt and pepper this, then add a dusting of flour. Pour milk over the top until the casserole is about ¾ full. Dot with butter and cover with foil. Bake at 350º for 2 hours. Uncover for the last ½ hour or so.

Mom’s recipe for scalloped potatoes and ham is like many of her recipes…..not exact. She just knew how to make many of these old “stand-by” recipes, and so could not give an exact measurement. So as you see below, this recipe calls for “some cheese” and a sprinkling of flour. Good luck!
