"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
3.5 to 4 lb. fryer, cut up
6 cups of dry bread crumbs
1/8 teaspoon pepper
1-1/4 teaspoons dried sage
2 tablespoons chopped onion
1/2 stick of melted butter
1 can cream of chicken soup

Directions:
Directions:
Cut chicken in serving pieces. Roll in flour seasoned with salt and pepper. Brown in shortening. Combine remaining ingredients using ½ cup of the soup. Arrange chicken in a Dutch oven. Pile the dressing in the middle. Make gravy: add 2 tablespoons of flour to 2 – 3 tablespoons of the pan drippings and blend well. Mix together water and the remaining half can of soup to make 2 cups. Heat to a simmer and stir constantly until gravy is blended well and thickened. Pour over the chicken and dressing. Cover and bake for 1 hour at 325º.

Personal Notes:
Personal Notes:
I'm not sure they are even called "fryers" anymore. Basically, it is a small chicken, weighing between 2.5 to 4.5 pounds. They are thought to be tender and juicy.
