3-4 T olive oil
2 cups diced onion
1/4 t salt
4 t ground cumin
1 1/2 lb. ground pork, chicken or turkey
3 (4 oz.) cans diced gren chilies or 2 7 oz. cans (mild)
4 c frozen cut russet potatoes
1 can creamed corn
2 c water
black pepper
1/2 c chopped fresh cilantro

Garnish: Shredded cheese, sour cream, sliced green onion



Directions:
Directions:
Cook diced onion in oil. Add cumin. Add meat and brown. Stir in everything else but cilantro and garnish. Cook until potatoes are done (10+ min.)

Servie in bowls and garnish with cheese, cilantro, green onion and sour cream.

I used ground beef and seasoned stew with Knorr's Chicken Bouillon crystals. I also used fresh potatoes I had on hand. I put crushed corn chips in the bottom of the bowl and poured stew over and added garnish. We thought this dish was pretty good. I used mild chilies but could use a little more spice for me (not Keith).
