1 HEAD RED LEAF LETTUCE (TORN INTO PIECES)
1 HEAD GREEN LEAF LETTUCE (TORN INTO PIECES)
1 CUP CELERY
1 BUNCH GREEN ONIONS SLICED

CANDIED ALMONDS: TAKE SLICED ALMONDS AND COOK IN FRYING PAN WITH 3 TBSP. WHITE SUGAR ON MEDIUM HEAT TOSSING FREQUENTLY UNTIL LIGHT BROWN AND COATED. YOU CAN SPRAY THE PAN WITH A VEGETABLE OIL FIRST.

1 CUP CURRANTS
CRUMBLED BLUE CHEESE
1 RED APPLE CHOPPED
1 AVOCADO CHOPPED
1 CAN MANDARIN ORANGES (DRAINED)

DRESSING
1/3 CUP OIL
3 TBSP. VINEGAR
3 TBSP. SUGAR
1 TBSP. FRESH CHOPPED PARSLEY

Everything can be prepared ahead of time but don't add the dressing and toss until just before you are going to eat or the salad will not be as good and will go limp.
