6 medium potatoes
1 c diced celery
2 tbsp minced onion
2 tbsp chopped chives or green onions
1 tsp chopped parsley
4 hard boiled eggs
1 tsp salt
1/4 tsp pepper
1 1/2 c salad dressing (such as Miracle Whip)
1/3 c milk
1 tsp prepared mustard
1 tsp granulated sugar

Peel and quarter the potatoes. Boil until fork tender. Drain and cool slightly. Roughly chop into 1" pieces.

Add celery, onion, chives, parsley, eggs, salt and pepper.

In another bowl, stir the salad dressing, milk, mustard and granulated sugar until smooth. Pour over potato mixture and stir well. Sprinkle lightly with paprika, cover bowl with saran wrap and chill.
