2 kielbasa, cut into rounds
8 medium potatoes, peeled and chopped
olive oil
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. paprika
1/2 tsp. thyme
2 cups shredded cheese

Directions:
Directions:
Preheat oven to 400º. Line a13x9 baking pan with aluminum foil and drizzle with oil and spread around. Put kielbasa and potatoes in a large bowl. Drizzle with 2 Tbsp. more of olive oil. Sprinkle with salt, pepper, paprika and thyme. Toss until evenly coated. Pour out into baking dish and spread out. Roast for 50 minutes to an hour, stirring every 15 minutes until potatoes are golden brown and tender. Turn off oven. Spread cheese over top of meat/potatoes and return to oven until the cheese is melted.
