1 C chopped dates.
1/4 C sugar
1/4 C lemon juice
1 tsp. grated lemon peel
1/4 tsp. salt
1/2 C butter
1 C brown sugar
1 egg, unbeaten
2 C flour
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/8 tsp. salt

Directions:
Directions:
In a small saucepan, mix the first 5 ingredients; cook stirring continually until thickened. (3-5 minutes). Let cool, Cream together butter and brown sugar; beat in egg. Combine dry ingredients, and sift into creamy mixture. mix well.
Divide dough in half; pat out each half into 8 " square on waxed paper. Spread with date mixture. chill, then roll up tightly, jelly roll fashion. Wrap and freeze for 24 hours or longer. To bake, unwrap, slice and lay 1 " apart on greased cookie sheet. Bake at 375º for 10 minutes.
