1/2 c. butter, room temperature
1 c. sugar
1 egg, room temperature
1 c. pumpkin puree
1 tsp. baking soda
2 c. flour
Pinch of salt
1/2 tsp. each: cinnamon, nutmeg, cloves
1 c. chopped pecans

Directions:
Directions:
Preheat oven to 350º. Cream butter and sugar until fluffy. Add egg and continue to beat until fluffy. Mix together pumpkin and baking soda. Let sit for 2 minutes. Mix the pumpkin into butter mixture. Mix together the flour, salt and spices and sift into butter/pumpkin mixture. Mix until just combined. Fold pecans into batter. Drop onto baking sheet. Bake for 11 - 13 minutes or until nicely 'golden brown'. Let cool on wire racks.
